Cherry Power Porridge offers a hearty, healthy breakfast for the whole family. The recipe was created by Kristin Celeste Shroeger, the food writer, recipe developer and photographer behind The Intentional Minimalist. The Intentional Minimalist encourages cooking in harmony with the seasons using sustainable whole foods and allergy friendly ingredients.
- 1/2 cup oats
- 2 tablespoons quinoa flakes
- 2 teaspoons chia seeds
- 1 teaspoon fresh mint
- 2 tablespoons raw walnuts
- 2 tablespoons tart cherry preserves
- Maple syrup (optional)
Boil one cup water in small metal sauce pan. Turn off heat and stir in one half cup oats, two tablespoons quinoa flakes and two teaspoons chia seeds. Leave pan on burner with heat source off, stir and let oat mixture rest for one minute. Stir and let rest again for one minute.
Remove mint leaves from stem. Crush two tablespoons raw walnuts and mince one teaspoon mint leaves. Stir in walnuts, two tablespoons tart cherry preserves and mint. Serve porridge with mint garnish and an optional drizzle of maple syrup if desired.
